Bob’s Red Mill Vegi Soup

Yesterday, Bry and I went for a brisk walk/jog around the neighborhood to get some fresh air.  The weather here has been terrible lately: very muggy and rainy.  No really… check out this forecast.

I can’t wait until it starts feeling more like fall in our next of the woods.  Rainy days are great for napping and watching a marathon of The Office, but not so great for feeling productive or going for an outside run.  Anyway… here are the stats from yesterday’s walk.

Around noon yesterday I decided to break for lunch.  While my soup cooked on the stove, I painted my nails with Essie “Forever Young.”  Something about red nails makes me feel chic and put together, even if I am still wearing sweats.

For lunch I decided to try out Bob’s Red Mill Vegi Soup Mix that I bought from the grocery store a few weeks ago.  Thank you for all of those who tweeted back to me letting me know if you’ve ever tried it before. It’s actually pretty good.  Next time I make it though, I’ll be adding chunks of celery and carrots to the mix to add extra flavor.  The soup gets a bit mushy if you let it cook too long, so just be careful and keep checking on it.
Bob’s Red Mill Vegi Soup Mix- Serves 1
Ingredients:
1/2 cup soup mix
2 cups water
  • In a large sauce pot, mix together the soup mix and 2 cups water
  • COVER POT! 
  • Cook on medium heat until boiling
  • Reduce the heat to low and cook for 45 minutes
  • Turn off burner and add extra salt if desired
  • Enjoy.
